The first of our Distiller’s Drop series is a small-batch release, blending three distinct marks aged in English Sweet Chestnut casks. A rare, limited-edition rum offering a nutty, rounded flavour with notes of milk chocolate praline, vibrant cherry and brown butter.
WHY AGE RUM IN ENGLISH SWEET CHESTNUT?
Traditionally, rum is aged in oak casks, which give those familiar notes of vanilla and white chocolate from the natural lactones in the wood. We wanted to see what would happen if we stepped outside the ordinary, and English sweet chestnut wood brings a flavour profile rum drinkers have not seen before.


As English Sweet Chestnut casks are so hard to come by, we worked with a local cooperage and had bespoke hogsheads made just for us, each one unique and never used before. This virgin wood adds remarkable depth and character in a relatively short time, infusing the rum with nutty flavours over 17 months.
Three distinct marks of batch distilled rum were filled into the hogsheads at 63.5% ABV, later bottled at 52.3% ABV. This is the strength our Founder & Master Distiller Lewis believes captures the full range of flavours while still giving drinkers the choice to add water if they wish. Drink it neat with no ice to fully appreciate the complexity of this one-of-a-kind liquid.
The liquids chosen to go into these barrels are all fermented using the wild trinity yeast that is a world-first and exclusive to all DropWorks Rums. The spirits are distilled through either/or column, double pot and double retort distillation methods using extremely narrow cuts before maturation.
Our Founder and Master Distiller, Lewis Hayes, hand selected these casks as being ready to be bottled after aging for 17 months. Only 450 bottles will be released in a one-off Drop. Act fast on November 3rd, and sign up for our mailing list to have first dibs.
